Relaxation, Sun, Flemings, Church, Mexican

What an enjoyable and relaxing weekend I had. Friday night I was waited on by my boys. K headed to the grocery while J and I picked up movies. K picked kid friendly foods for dinner and by kid friendly, I mean easy for kids to cook, not eat! We relaxed in the backyard while J had an awesome time grilling hot dogs for dinner. Chips and dip were also on the menu.
My little man did an awesome job getting the outside a little burnt, just like I like! We planned to watch our movies after dinner but got caught up watching Swamp People and never made it to the movies. Swamp People is a new reality show about alligator hunters in the swamps of Louisiana. It is hysterical. I really don't think I would be able to halfway understand them if I weren't dating a coonass and already had a lot of contact with their accent.
I've been really bummed about my running situation lately because my plantar fasciitis kills me for days everytime I run and I am so excited about wanting to do the St. Jude half. Plus now my little soreness in my second toe has gotten worse and hurts for days also instead of just a few hours. Sooooooo I decided to do a little experiment Saturday morning. I'm going to start training as if I am walking the half and see how that goes. K seems to think it will be just as bad on my feet but I'm not so sure. It will definitely be less pressure pounding on it and then once I get closer if I decide to step it up, I can. Anyways, I decided to start off with a 5 mile walk Saturday morning.

The weather had cooled down and I was hitting the pavement before 9am. It was a wonderful walk! When I was through, I took some Aleve and iced my foot down and I barely felt it the rest of the day. Maybe a little bit but nothing like what I would have felt if I would have run. Plus my time wasn't that much less than if I had run. I can walk my ass off and my running times are not so hot so it may be all good :) My plan of attack is to walk 3-4 miles 2 or 3 times a week and then do a long walk on the weekends. I started off with 5 miles and will hopefully increase it by half a mile each weekend.
After my walk, I fixed myself and my boys a "fried" egg sandwich and some pineapple and cantaloupe. J went over to his dad's at noon and I came back and spent the rest of the afternoon at the Redneck Riviera. Once I was properly sunned, we decided to watch one of the movies we rented Friday night.
It was a pretty good and funny movie with a whole list of great actors. Too bad they had to go and make Bradley Cooper and McSteamy gay in the end :(
K and I wanted to go to Restaurant Iris for dinner but couldn't get reszies so we went with Plan B.

Even though it wasn't Iris, we still enjoyed it a lot. We had the seared tuna appy and then split an entree. The special was beef tenderloin topped with a lobster cream sauce and BBQ shrimp. It was great but not as great as the little jewel I tried for the 1st time ever there.

Fleming's potatoes are amazingly amazing! They were some kind of scalloped potatoes with yummy cheeses, jalapenos and cream. To. Die. For!
Sunday morning was filled with Target and Schuck's shopping and I paid some heavy cover charges. It started raining while I was out shopping so I spent the afternoon relaxing on the couch, in between cooking cornbread salad for a farewell bruncheon we had at work today for the Sheriff and the people he is taking with him to the mayor's office. I picked up J Sunday afternoon and we went to church and then had dinner with K at Swanky's. I got the taco salad, which tasted pretty good until I tasted K's enchiladas. They were the best I've ever had besides my own. My dinner was ruined after that so I took a few more bites of his and then filled up on cheese dip. My salad was extremely disappointing after that. Bedtime was not long after we got home. This morning, I did a 45 minute ellip/strength session before work and had a fruit/protein smoothie for breaky. Lunch consisted of cornbread salad, some chicken wings, some spaghetti and regular salad and more cake than I should've eaten or spent calories on. Oh well, maybe next time I will display better self control but probably not.

BBQ Hens, Dog Madness and a little Flight

After work Wednesday, J and I took Margo and Little Lexie Lou Who for a long walk around the neighborhood. After that, we threw some cornish hens on the grill. I roasted some potatoes and a spaghetti squash to go with it. The squash was a new thing for us and we loved it....well K and I did, J not so much.

After roasting it and stripping it out of it's shell, I seasoned it with salt and pepper and sprinkled it with parmy. It was supa dupa!
This is what was going on the whole time I was cooking.

Little beggars! It is nuts having this many dogs in the house but luckily the dog whisperer is available sometimes to calm them down.
We were able to watch Big Brother in peace :)
Yesterday morning, I woke up and did some yoga and fixed a turkey sausage, egg and tomato sandwich with cantaloupe for breaky. Got to work and dealt with more madness. Cannot express how bad I want to get this whole new sheriff transition over with. It is no easy task scheduling 2000 people to get sworn in as law enforcement in 2 days. Bleh! Stress, no bueno! I left the office at lunch to go visit Brian Dill in the hospital. He is making lots of improvements every day. I can't believe it was just Monday when the doctor's said there was no hope. After going to the hospital, Mel and I had lunch at Sekisui.
J started back to karate last night at Kirby Woods Baptist Church. He was glad to be getting back into it and did an awesome job. I loved the class/instructor too. He incorporates bible verse memory and messages into the lessons. I really love that a program like this is available. We grabbed some Chick-Fil-A for dinner and got home in time to get all of J's homework checked and watch Big Brother.
There was no workout this morning, maybe after work :) Breaky was a strawberry, banana smoothie. I guess I've been as high strung and my stress as easy to read as Bill has been because a few people from the office wanted to take me out to lunch today. The weather was gorgeous so we walked down to Flight. I haven't been since the first time K and I went for his birthday so I was glad to be going back. I ordered the New Orleans flight for my entree and it was good but not quite as good as when we had dinner there. It included blackened grouper over cheese grits, seafood gumbo and a little piece of shrimp po' boy. Don't get me wrong, it was GOOD just not as positively delicious and perfect as the dinner was....but dessert, that was a different story. It was heaven on a plate!

I made my own flight up. I had the chocolate, caramel, toasted pecan cheesecake, vanilla bean creme brulee and German chocolate cupcake. MMMMMMMMMMM! And that was the noise I made the whole time I ate. The stroll in nice weather and wonderful lunch calmed my nerves down significantly. One more hour til the weekend :)))))))

Shelby Farms and lots of produce

After work last night, J, K and I headed over to Shelby Farms to get some exercise in. K rode his bike on the trails while J and I ran/walked the 3 mile loop. We also brought little Lexie Lou Who with us to burn some of her energy off. It didn't help much....
Did I fail to mention we are dog sitting Lexie Lucifer (that's what K has so lovingly renamed her)? If I didn't mention it, it may be because I'm hoping it's a bad dream I will wake up from soon. She is such a cutie but so damn neurotic and a complete spazoid. I love her to death but there is no rest for the weary when she is around. For dinner, I picked up some honey ginger soy marinated chicken kabobs and garlic herb marinated lamb kabobs from Whole Foods. I made some rutabaga fries and roasted brussel sprouts to go with the kabobs. We had some tzadaki sauce with the lamb :)

This morning I caught up on some Chelsea's while I did 45 on the eillip.
Breaky was a banana nut vita top with greek yogurt, almond butter, a drizzle of honey and a peach.
Work is super crazy right now with the change of sheriffs coming up but I still managed to get home for a lunch full of fresh veggies.

Romaine and baby lettuce, tomatoes, strawberries, blueberries, bell pepper, goat cheese, left over chicken and brussel sprouts and some poppy seed dressing. A few pieces of the lamb meat made their way on to my plate too.

Snackage was the biggest and juiciest plum I've ever eaten (found it at Whole Foods) and some caramel greek yogurt.

New yoga dvd & lunch with my boyfriend on the patio

I didn't get my jog in last night and went straight to Mom's. She wanted me to make Aunt Opal's Will, Living Will and Power of Attorney on Legal Zoom and I wasn't sure how long it would take and didn't want to be up all night doing it. Mom made us turkey subs and salad for dinner and I got all of the paperwork done pretty painlessly and cheap compared to going to an attorney's office to get it done.
I got up this morning and did my new Pulse Yoga DVD. I really liked the exercises but the video itself was lacking. It's 2 older women at some resort in Mexico with no music and no great landscape. It was only 30 minutes long so I did 20 minutes of pilates too. I was pretty hungry this morning so I chopped up some cantaloupe and made me a "fried" egg and provolone sammy on a whole wheat english muffin.
My wonderful boyfriend called and requested a lunch date so I met him at Panera for a lovely lunch on the patio with magnificent weather. I had the Pick 2 with Apple Fuji salad and Mediterranean veggie sammy. It was so beautiful and the weather so perfect, we didn't want to leave.

Stace's Bachelorette Weekend

Friday after work, I headed east to spend the weekend with Stace. I rolled into Nashville around 8:30 and met Stace at her house. Jett was at a birthday party so we had all night to catch up and stayed up talking til about 12:30. I got up Saturday morning and went for a jog/run in the neighborhood across the street from her house. It was a cute hood and here is part of the scenery that I got to enjoy.
It was very hilly and a pretty tough run but I got 1 3/4 done running and then did 1 1/4 walking. Not horrible and I was still able to enjoy myself. After the run, I took a quick shower and we headed to Panera to grab some breaky.

I had the breakfast power sandwich and some fresh fruit.

I was so happy to be spending some QT with my bestie. I've missed her so much since she's moved and hate that we don't get to hang out much anymore. After breakfast, we met Marlane and got our mani/pedis done. After that, we did a little shopping, went back to Stace's to relax, grabbed some awesome sushi for lunch at Wild Ginger and then took a little power nap to rest up for the big night.
The bachelorette party started at Lauren's with champagne and a lingerie shower. We grabbed some dinner at Rumba (I had the mussels and roasted broccoli), jumped in the limo and rode around for a little while, then partied it up at Mai, Play and Lime. Lauren and Lauren took the limo to the liquor store to stock up while the rest of us were getting one last drink and paying our tabs. We had to wait outside a few minutes for the limo to get back and it was plenty of time for an idiot to hit on us and try to buy us drinks.
Here he is walking back to Bricktop's without anyone to buy a drink for. I wish I would've gotten a front and up close shot of his outfit. He had on a long sleeve shirt and goofy tie, polyester pants and tennis shoes. I really don't know what he was thinking and hope he just has some type of brain development problem.
We spent most of our time at Mai acting goofy on the patio and at Play dancing the night away with the gay boys. When we wound up at Lime, Jett and some of his friends were there too. It was almost 1:00am at this point and I was exhausted to I had the limo take me back to the house. Needless to say, I woke up Sunday feeling like ass and wondering WHY do I drink? I knew the ride home wasn't going to be good and that the sooner I got home the better I would feel so I showered and hit the road by noon. I stopped for gas in Bellevue and found one of my favorite treats ever!
I have never seen these anywhere but in Louisiana so I was very excited with my find, even if my tummy wasn't well enough to handle eating any during my ride home. I made it home in time for a little nap before picking up J. We ordered in Garibaldi's for dinner and watched Big Brother before going to bed. I slept through a morning workout and breakfast. I ran home at lunch and ate leftovers from last night for lunch. Waiting on the work to end so I can get in a jog now.

Noodle Doodle Do, Yogatoes and Haircuts

I met Marcy at Do for more soup at lunch yesterday. This time I ordered the Kobe beef red curry soup and she had the chicken noodle matzoh ball soup. I found out that the curry soup is much better when you just eat a little out of someone else's bowl. It is very rich and very irresistible which means I wound up with a tummy ache because I had to eat all of the deliciousness. I tried the jewish chicken noodle and it was good too. I'm usually not a big fan of chicken noodle soup but this was quite tasty. I ran by the house after that to pick up some clothes to donate to the Neighborhood Christian Center and saw my Yogatoes had arrived!

They are suppose to strengthen your ankles by stretching your Achilles tendons so we will see how that goes. I think they make my feet look kinda Fred Flintston/kinda Neanderthalish looking. Cracking up!
I left work a little early to get J and I over to Dan's to get our hair did. I've never brought J to anything more than a Supercuts and he was shocked by the hairwash/scalp massage.
Look at that look on his face! He kept it on the whole time. He looked very handsome when Dan was done and I went all out and got all of my hair chopped off too. It's now in between my ears and neck in length. Not crazy about it at this length but it will be ok when it grows out just a bit BUT I am crazy about how cool it feels and how little time it took to blow it dry this morning :)
For dinner last night, I went back to the old school and made the hot ham and cheese sandwiches with butter/onion/mustard sauce that Vicky use to make when I was a kid. I haven't made these in probably 15 years and have been missing out on a lot. They were better than I remembered and K was a huge fan too. After dinner, we watched Big Brother and went to bed early again. I am having a hard time adjusting to J being back in school and having more of a program to follow. Why can't summer vacay be everyday?????
I slept through workout time this morning and was still full from dinner so I skipped the breaky part too. K met me at the house for lunch and I got my bags packed for my Nashville trip too.

1st Day Traditions still going strong

I picked J up from school for our traditional first day of school activities. This was our 3rd year of doing this and Jackson came with us this year. We started with lunch at Uncle Lou's.
J and Jackson scarfed down a 3 piece meal with french fries and a biscuit.

They were all smiles the whole time. It wasn't in the mood for fried chicken so I decided to try one of their burgers and fried pickles. The burgers always look so delish and I'm always thinking I'm missing out on something delicious while I'm gnawing on a chicken bone but they look a lot better than they really are. You know a burger is like pizza and even a bad one is still good but it wasn't great. Nothing to worry about missing out on. The fried pickles were spears instead of slices, like I like, but the batter wasn't great.
After lunch, we were going to the zoo and the boys couldn't wait.

The temperature must have risen a good 20 degrees by the time we got to the zoo. It was scorching. We visited Cat Country, the bird house, the farm, the Africa section, Teton Trek, the komodos, the hippos and the boys went in the snake house (gag!!!!).

We also did some cooling off in the river and the geysers.

After the zoo, we dropped Jackson off and went home to go on another adventure.

We explored the greenway towards Shelby Farms for the first time. It was really nice. There were lots of bridges and raised paths running through the woods and going across rivers. We went past the training academy and turned around at Dovecrest. I would've liked to have gone farther but J's bike is too small for him and I figured it wasn't all that comfortable. Here are our stats:

As you can see, we were going at a pretty leisurely pace. J needs to work on getting out of his comfort zone and putting hard work into things. That will be a work in progress.
After we got home, I wanted a little more so I decided to do a mile jog. I can't believe how slow my running has gotten. It took me right at 12 minutes to run a mile and I was huffin and puffin too. It is very discouraging but I'm going to stick with it.

It can only get better, right?
I got through around 7:30ish so dinner needed to be quick. I threw a California Kitchen cheese pizza and an Amy's Spinach Florentine pizza into the oven and chopped up some salad fixings for us. Quick, easy and delish. After dinner, we watched Big Brother and it the hay. Not bad for the 1st day back to the grind.
This morning, I did a 45 minute elliptical/strength session which included 3 sets of 5 minutes on the elliptical and 10 minutes of strengthening. Breaky was something new! I toasted a banana nut vita top (this is the new) and mixed it up with some greek yogurt, almond butter and a little honey with a banana on the side. Very satisfying and filling :) I think the vita top alone will make a great dessert!

Detour of Plans, 1st day of school and WICKED!

J and I had plans to explore the greenway towards Shelby Farms when we got home last night but plans changed quickly. On my way to pick up J, K called and was stranded at Shelby Farms after having a blowout on his bike. We had to go home, pick up K's truck and then get him from the park. He hit some kinda heavy wire and almost crashed and had to carry his bike to the Ranger's station and borrow a phone and then I wouldn't answer my phone because I didn't recognize the number.....he had it rough for a bit. We got home and had to run back out to meet J's old baseball coach to pick up his medal and pics. On our way home, we stopped at Pei Wei and picked up some dinner: wonton soup, lettuce wraps, shrimp fried rice and crab rangoons. It was supa good and I ate way too much, which made me feel even worse after not getting any exercise. We watched an episode of Shaq vs. It was pretty funny. He's a nut! Bedtime was 9:00pm sharp for J since it was a school night and I was right behind him. He mentioned the other day that he was going to start reading his bible before bed and he did it 2 nights in a row. We forgot last night until it was already 9:00, so it didn't happen. A habit we are going to have to get use to...
I got up this morning and did my new Jillian Yoga dvd. I was still half asleep and not feeling too energized so I went with the level 1 and DAMN it was a challenge. I'm scared of level 2. After that, I did 10 minutes of pilates stretching and hit the shower. I skipped breaky because I was still so stuffed from last night. J woke up early (I think he was excited to be going back to school...no matter what he says) and I was reading my morning devotions so he decided to catch up on his bible reading too.
How stinking cute is he???
We finished getting ready for the day and were off....
I helped him get to his class, said hello to Mrs. Albertini (SOOOO GLADDDDD he has a good teacher this year :)))))) and met the new principal, Mr. Geyer. He has a lot of new rules and seems to be pretty strict, which is what I think CTK needs. I'm excited about him. He isn't allowing any sodas in the school! Finally someone that is on the same page as me :)
Thanks to the 1st day of school being a half day, I get a half day too. J and I have a tradition of going to lunch at Uncle Lou's chicken and the zoo on the 1st day so I am almost out of here. I was able to accomplish something very important today though!
I snagged us tickets to Wicked in the pre-sale!!!! CAN. NOT. WAIT!

Second 1/2 of Cowboys Trip is Booked!

I ran to the mall yesterday at lunch to pick up a present for Stace's lingerie shower. While I was there, I grabbed a spicy chicken wrap from Chick-Fil-A for lunch. After lunch, I got our hotel booked for the Cowboys trip. When J, K and I went last year, we stayed at a downtown hotel and totally enjoyed it but everyone decided we wanted something close to the stadium so we could be close and enjoy the tailgating. Great idea except there aren't super nice hotels near the stadium like there are downtown but I still managed to get us a good price at a good hotel. We will be shacking at the Hyatt Place and it's only 2 miles from the stadium! Here's the link: Hyatt Place Looks like super duper sleeping arrangements! I love how the hotels FINALLY decided that a good bed is a good thing :) I can't believe it is only August and we already have the whole trip planned. We have come a long way in 3 seasons. Yesterday's weather was perfect, especially compared to the last 2 weeks of 100+ degrees. After work, I decided to take advantage of it and start "training" for the 1/2 marathon. I've decided that I am going to train the way I want to train and not make myself miserable following someone else's plan. I know I can finish the race, even if I have to walk half of it, and that is what matters to me. Finishing, not the time it takes so I will "train" by trying to improve my run performances but I'm not worrying about how long I can go in what amount of time. I think this is the best way for me to be able to enjoy the whole ordeal. K and I talked about it last night and decided to maybe start doing some other 1/2's in cities we are interested in visiting like Savannah, San Antonio.....More bang for our buck. Get to go on cool weekend trips and stay in good shape. Anyways, after work I went for a jog. I took it nice and easy and didn't overdo it like I am prone to do. If I have any hope of staying in decent condition during training and the race, I am going to have to cool it and remember that I don't have to blow it all out at once. With that in mind, I stopped my run and went to a walk around 15 minutes when I started feeling my knee get sore. I walked for 30 more minutes and did a little over 3 miles. I

also took quite a bit of time afterwards to stretch. Gonna do it right :)
K and I decided to celebrate our last week night that wouldn't be a school night for a while. We were going to try out The Reef but decided on a patio since the weather was so nice.
Boscos it was! We did some serious people watching and eavesdropping while we had a few drinks and snacked on some calamari. There was the pinkie ring wearer, the skinny pants know it all that had to confess his DUI to his wife, the lounge shorts wearer that didn't give a damn and the boxer nose girl. We also had some dinner while we were at it. K got the blackened grouper sandwich and I had the shrimp and grits.

One of these days, I am going to remember to snap a pic before I dig in. It doesn't look all that great but the grits were amazing! They were asiago grits topped with a tasso gravy. Can you say double yum? I did! We made it home around 10:00 and got to bed. I wanted to get up early and do my new Jillian yoga DVD but that didn't happen :( I slept til time to get ready. I was still a little full from dinner so decided to make a smoothie for breaky but then I didn't have quite enough milk so I had to settle for my smoothie in a bowl like frozen yogurt instead of in a glass like a milk shake.

I snacked on some strawberries and veggies (carrots, tomatoes and bell pepper) with hummus. Marcy and I were FINALLY able to get together for lunch. We met at DO sushi and noodle.
It was the first time I had been there at lunch time and what an awesome surprise. They do not offer sushi at lunch time and I was super bummed about it at first but decided to try some soup since Marcy bragged about how great it was. I ordered the shrimp wonton soup with BBQ pork and she got the kobe beef curry soup. Mine was excellent untillllllllllllll I tried Marcy's. I always avoid anything with curry because I thought I didn't like it but this was some of the best soup I have ever had. So damn good. I will definitely be going back for that again.

1/2 of the Cowboys Trip Booked

Another day of In Service was survived Thursday. Lunch was a nice break. Vick, Vernon, Ray Sides and I went to Humdinger's. I had the blackened salmon with pineapple salsa, rice and slaw. It was good but the snapper I had the week before was better. After class, I went home and relaxed. For dinner, I made some old school BLT's on white bread and they were so good. I picked up a new kind of chip to try with them, sweet potato and beet chips and they were quite the hit. Very delish! K and I caught some couch time watching Big Brother and keeping up with the Cowboys/Raiders game....which the boys wound up losing. WTF? Couldn't even score a TD. Not looking good so far :(
Friday morning, I made a "fried" egg sammy for breaky and had some fruit. I got to work and all hell broke lose. Sheriff elect Oldham wanted all of our numbers on his desk 1st thing and Felecia, the slug that use to work in my office, had screwed all the computer files up by not keeping them current, so I spent ALL DAY verifying and correcting numbers. Luckily I brought some sliced up veggies and hummus to snack on and had some trail mix in my desk. It held me over but I was HON-gry when I left. I skipped out a little early, picked up J and headed to the house. I had a BLT thanks to Thursday's leftovers and then unwound from the whole day and baked Grandmother's strawberry cake for that night.

K and J were trying to dig in as soon as it came out of the oven. Later that evening, we went to a cook out at Chuck and Mel's. Darren, Wendy and Logan came too. We had grilled salmon, burgers, BBQ chicken, Cajun sausage, roasted potatoes, pasta salad, spinach salad and grandmother's cake. We were also able to get half of our annual Cowboys game trip planned. We got Darren online and found our game tickets, now I have to do my part and snag us some rooms. Every year, I am in charge of getting the rooms and have been very successful in scoring awesome rooms, in a great location and about half of the price. I'm going to try to get to that today.
I had to go pick J up Saturday around lunch because he spent the night with the Mays'. We got home, made some lunch (I made the boys some grilled cheese and a salad for me) and relaxed. I thought about setting up the Redneck Riviera but it was so damn hot that we decided against it. Saturday night, we went to the Redbirds game. They played Colorado Springs and innings 1 through 8 looked like they were for sure putting a big L in the column for that night and then in the 9th inning, they came back from an 8-3 score to win it. It was awesome AND it was the 2nd time this season we have seen them come from so far behind in the 9th to win it.
Happy fans and players at the end of the game! They also had a fireworks show after the game which I was so excited about since I haven't had a close up to fireworks for the past two 4th of Julys!

J waited patiently for the show to begin.

Here we go! :))))))

It was a good show, just a little short for my likings but still good! The show was done to all Elvis songs since it is Elvis week and that was great too. It was way too hot during the game to eat (102 degrees!!!!!) so by the time we were headed home and had cooled down, we were starving but didn't want to go sit down someplace since we were so sweaty and smelly so we stopped by Sonic for some late night burgers.
Sunday morning, J and I got up and went to church at CTK. Mom, Roy, Sis, John, Marcia and Dillon were there too. After church, J and I went to eat at Panera with Mom and Roy. I had the pick 2 with the chipotle chicken panini and tomato and mozzarella salad. Sandwich was delish, salad was boring. After lunch, J and I went to Davis Kidd to pick up a birthday present for Taylor and also got books for J and K and a mag for me. We also went to Target and Rack Room Shoes for some last minute back to school stuff for the J man. We got home in time to chill for about an hour and a half before heading over to Sissy's to Tay's birthday party. They cooked out burgers and hot dogs and we hung with the family the rest of the night. We had a lot of fun, even though I got in trouble with mom for K and I not knowing when we are getting married yet. Tom and Benny weren't able to make it and that sucked. I haven't seen them since Tom got the news about his cancer. It's pretty serious and I want to see him before things get too bad.
I got up this morning and was still pretty full from last night's dinner so I whipped up a smoothie while I got ready and shared some cantaloupe with J while I drove him to meet his dad.

In service, what a bore!

I was so glad to have nothing to do Monday after work. I just wanted to veg and relax and that's what it was all about. I read a ton of magazine articles, cooked some crab legs, corn and potatoes and chilled with my man. Tuesday morning, I woke up Tuesday and did some yoga before work. Breaky was a whole wheat waffle topped with some cashew butter, greek yogurt and a drizzle of honey.

This was the first time I have ever eaten a waffle with out coating it in syrup and was convinced there was no way I would like it any other way but this was super yummy. Another great meal idea I found from all the healthy living blogs I've been reading. I also had some gooseberries.

I saw these Monday when I was at Whole Foods and grabbed them to try since I have committed myself to trying new, healthy foods. I had never seen gooseberries before and they looked interesting but that was it. I wasn't too fond of them. They were pretty tart and had no sweetness to them at all. I ran home at lunch, fixed a salad and heated up the leftover tamale from our Corky's dinner the other night. After work, I had a girls' night with Evelicious and Marlinee. We met at Cafe 1912 and had a few glasses of wine, dinner and lots of good, funny and catching up convo. I love these girls and wish our schedules would let us spend more time together. We had a great time. We drank some Pinot Grigio, I ate some grouper and risotto and asparagus, and laughed my ass off!

Eve was in this pic also but cropped herself out because she said she looked fat. She looked awesome but I'm not gonna argue with a woman that thinks she looks bad. You can't change her mind no matter how wrong they are. I know because I've been there.
I got to sleep in a little Wednesday because I had In Service and didn't have to drive all the way downtown.
I bought some naan bread at Whole Foods on Monday and am in love! It is so yummy but kinda high calorie. I didn't realize how many cals were in it until I had already scarfed a whole one down. For breaky, I made a couple of "fried" eggs and put them on top of half a piece of naan, some sliced avocado and some hot sauce.

It was so yummo. Class was super boring and actually wasn't even class. It was a lot of sitting around with no instructor in the class and a lot of bullshitting with the instructor in the class. Good to know some things never change. They did show the dashboard video of the West Memphis police officer slayings, which I wasn't crazy about watching. It made me super sick to my stomach. We had a long lunch so I ran by mom's to drop off J's uniform pants that need to be hemmed and ran by Chick-Fil-A and grabbed a spicy chicken wrap. After class, I ran to the Fresh Market and picked up stuff for dinner. When I got home, I jumped on the elliptical for an hour and caught up on Rachel Ray and Chelsea. For dinner, I seared some tuna and roasted some asparagus and celery root.

It was all really, really good. The tuna was so fresh and delish. Some of the best I've ever had. K and I caught up on Big Brother and Modern Family.
I got up this morning, did some yoga, made a whole wheat waffle with almond butter, greek yogurt and honey and cut up some cantaloupe.

Jalapeno got to enjoy some cantaloupe too!
